We're launching our brand new knife from Japan’s leading industrial area, Tsubame-Sanjo, on Kickstarter!


At Shimomura Kihan, we create, manufacture and sell kitchen utensils in Tsubame-Sanjo. And this time, we developed an extra sharp and lasting kitchen knife & sharpener set.

This is our first Kickstarter challenge, and any support is greatly appreciated !




Since its establishment in 1874, Shimomura Industrial Co., Ltd. has been manufacturing kitchen knives and blades in Tsubame-Sanjo. Each of the products are hand sharpened by a craftsman.

The particularities of the “Tsubame-Sanjo Takumi Warikomi All-Purpose Knife” is its remarkable sharpness and easy maintenance. The blade has a three layer structure in which the core, made of AUS10 steel, solid and easy to sharpen, is clad in rust resistant stainless steel.


The characteristics of this high-grade stainless steel with added chromium, molybdenum, vanadium and other, for an improved hardness and abrasion resistance, is that it is rust resistant and easy to care for.

The blade is a Warikomi type, where hard steel is clad in stainless steel. Compared to an all steel knife made of only one material, it is more solid and harder to break. Moreover the cladding material is easy to sharpen, allowing you to use the knife for a long time.




The high solidity is achieved thanks to an appropriate quenching, as the materials are rich in carbon.

The thin mirror-finish edge has little resistance against food and enables effortless cutting. Slippery tomato skin and chicken skin can be cut neatly, and the food will have a clean cut surface.


The compressed laminated wood grip (Pakkawood) fits perfectly in the hand, so you can grip without using much force. It is in the same tone as ebony, has a pretty grain and is a beautiful material with good luster. 


Two types of roll sharpeners, diamond and ceramic, for a quick and smooth finish!

Just press the cutting edge of the knife against the grindstone and go back and forth about 10 times, against the diamond grindstone first and then against the ceramic grindstone.

※For stainless steel and titanium double-edged knives only. Cannot be used for kitchen knives and blades with special shapes such as single-edged blades, wavy blades, and serrated blades.

You can feel the efficiency of this "double sharpener" after only one use !

When using a knife that has lost its edge, your ingredients get crushed, and the food you go through the trouble of preparing might not look as delicious. With the double sharpener you can easily whet your knife’s blade even daily. Not only vegetables, meat and fish, but also thick rolls can be cut quickly without getting .

Compared to when sharpening with a regular whetstone, you do not need a heavy whetstone or a large workspace around the kitchen to use the double sharpener.



Tsubame-Sanjo is a region known across the world for its manufacturing of hardwares and housewares.


The history of Tsubame-Sanjo’s metalworking dates back to the Edo period during the 1700s. The industry started with farmers producing nails as a side business. Nowadays, Tsubame-Sanjo’s products have been selected for the cutlery used during the Nobel Peace Prize banquet and are highly regarded, not only in Japan but internationally.

At the time of our founding, we started by manufacturing blades for agricultural tools such as plows and hoes as blacksmiths. Gradually, we have applied the technology to various other kitchen utensils such as stainless steel knives and shears, and have expanded our market throughout Japan. Currently our group comprises Shimomura Kihan Co., Ltd., Shimomura Industrials Co., Ltd. manufacturing kitchen knives, Shimomura Corporation (Hong Kong) Ltd. our overseas sales base, and Shimomura Cutlery (Shen zhen) Co., Ltd. our manufacturing and sales branch in China. This kitchen knife is a product developed together by Shimomura Kihan Co., Ltd. and Shimomura Industrials Co., Ltd. from the Shimomura group.

From the forging of the steel to the sharpening of the blade, every process is handled by our company.


By using a sharpening technique called “wet grinding”, where water is poured over the blade before it is carefully sharpened, we give the knife’s blade edge a shape called “Hamaguri shape”, referring to a convex grind in english. This process, directly connected to the sharpness of the knife, is one where the great skills of the craftsmen are the best put to use.


In the past, knives of great sharpness were produced by relying solely on the craftsmen’s intuition and feeling, but this is not the case anymore. Nowadays we produce high quality goods by introducing the latest equipment and verifying the shape of the blade’s edge through a microscope.

※No sharpening needed for brand-new knives.

※The lifespan of the grindstones is around 400-500 uses, with running the blade through the sharpener 10 times for each use. When the small grooves on the surface of the grindstone disappear, it indicates that it should be replaced.

The roll sharpener is easy to use, allowing everyone who would normally struggle to sharpen their knives to maintain their blades effortlessly.
