A traditional forger of Japanese Knife and Sword. Using the amazing skills that have been gathered and perfected over 26 generations, STICO Co. are collaborating with Fujiwara Kanefusa to bring their first project to Kickstarter!

 

The Santoku Kitchen Knife that will be produced for this project, looks to help bring about a revival of the souls of Japanese swords in Kitchen knife form. We hope to be able to contribute to spreading the charms of Japanese sword culture to the world, as well as helping to stir up even more support for the Japanese Knife scene.

Due to the coronavirus, we have seen a rather large decrease of foreign visitors to Japan, so we thought it would be best to bring the soul and spirit of amazing crafters to the rest of the world, this time via crowdfunding!

 

Japanese swords were a large part of many influential leaders' image, were a large part of formal ceremonies at festivals and due to a rapid expansion of the development of these blades, led to a period a wide range of creation techniques that are used to create various blades. 

The spirit and technique of the Fujiwara blade has been passed down 26 times, and this project will be handled by the 25th generation of the house. 

The Fujiwara blades are created with the foundations being the spirit of the samurai. 

The Samurai of the Kamakura era, the samurai tempered their spirit with daily training of Budo or martial arts, loyally training to create a preparedness, while living a modest lifestyle. 

In order to serve these diligent warriors, the Fujiwara Blades were created with this principle in mind, disregarding the time needed, and forging each blade one by one by hand and instilling this principle into the blade. With that, the blades were made to be simple but also durable, creating famously highly valued unsurpassable blades. Nowadays, even outside of Japan, the blades are highly valued, and said to be incomparable to many other Japanese blade makers. They have been fortunate to have a vast foreign following to this day. 

A blade forged with a true craftsmen spirit, and tempered with a samurai’s soul, this is the beauty of work that is the Fujiwara Kanefusa blade. 

With this collaboration with STICO, we hope that many people from all over the world will be able to get their hands on the Santoku Knife, and help to spread this samurai soul all over Japan. 

 

 

Using the collective years of know-how from the past Fujiwara generations, and the use of amazing high quality materials. This knife has been created for use in not only professional kitchens but for use in the home as well, being an easy to pick up knife. 

The molybdenum steel core of the blade that creates the edge, as well as the multi-folded damascus steel that creates the outer layer of the blade have been hand selected after careful screening.
           Damascus steel blades are made to be strong, as well as being able to not be as susceptible to damaging materials such as acidic substances, salt, and alkaline substances.

Just like when creating Japanese Swords, the blade needs to be a perfect marriage between the materials. By doing so you can make a long lasting edge that doesn’t chip.

 

The 25th generation Fujiwara does it all from creating the blade in the forge to creating the edge on the blade.

In Japanese there is a saying 「相槌を打つ(あいづちをうつ)」or two blacksmiths hitting the metal. Its basic meaning is of having a flow between two partners in communication, with one side being able to listen and give assent or reply in a small way. 

This saying comes from the smithing world, from when the blacksmith would be tempering the iron, the master and disciple would face each and with each blow from the mastersmith, the apprentice would reply with a similar hit on the iron. This communication between swordsmiths would become famous, and from there it would come to mean to match your partner's rhythm. 

Each hit of the blade would infuse the swordsmith's soul into the blade, and with these handmade blades you can feel the skill that goes into them, with it being more noticeable with the quality of the material used. 

 

A very intricate and sharp edge, that boasts an amazing cutting power.

 

The blade has a bevel that goes straight from the handle to the top of the blade. This allows for an easy transfer of power from the hand through the food cutting with ease even with the toughest of foods.

■The edge of the blade is truly sharp and cuts with ease.

■Without putting any power into the blade, I was able to cut through so hard root vegetables, helping to reduce my cooking time. 

 

In Japan, a damascus knife is known as being the folding of damascus steel combined with a molybdenum steel core.

As the various steel folds interact and create a beautiful pattern on the blade, this is one of the amazing charms of these knives. As the folds build up they create amazingly banding patterns along the face of the blade, making the blade itself look like that it contains an ocean itself.

This pattern is also dependent on the bladesmith, and it is said that that bladesmith’s uniqueness comes out in the patterns. What’s more, with this blade, the top edge of the blade is hammered, to give an extra pattern to it. These patterns are fairly rare when it comes to knives made for the home, and can only be achieved via skilled smiths. But this hammering isn’t just for the pattern, but has a unique function of helping the food not stick to the blade.

Along the spine of the blade, the signature of Fujiwara Kanefusa is also engraved. In the swordsmith world, by doing so, it is the equivalent of pouring their soul into it, and means that they are proud to send the knife out. Each signature is done by hand so no two are the same. 

The handle of the knife has been made to fit perfectly in your hands when grasped. It has an outstanding grip and we think is the perfect weight for cooking. When using to chop, you don’t need to support it as much, and can feel safe to use it. In between the handle and the knife, is a connecting piece of steel, which means that you don’t need to worry about food and so on getting stuck inside, and helps with cleaning the knife. 

Santoku Knives are known to be an all-purpose knife, great for not only fruits but also for meats and fish for not just cutting but removing skin and the like. For these reasons, we wanted to bring to the table a knife that could hit a lot of points to make it useful to all types of cooks. We also wanted to add a Petty Knife that is great for peeling fruit and veg as well as other delicate tasks. 

 

Fujiwara Kanefusa | 25th Generation and Agency of Culture Affairs Certified Swordsmith  

Was a trustee for the All Japan Swordsmith Association, former Auditor for The Society for Preservation of Japanese Art Swords, former Vice-Chairman for the Sekiden Arts Preservation Society, and former Chairman for the Sekiden Swordsmith Society.

Real name is Katsuo Kato, but in 1984 was bestowed upon his father the succession of the Fujiwara Kanefusa name. 

1957 | Born in Seki City, Gifu Prefecture

1975 | Started training under a Living National Treasure, the swordsmith Sadakazu Gassan. 

1982 | Was certified by the Agency of Cultural Affairs as a Sword Smith

 

A Living National Treasure is a term that is used in Japan for certain certified people that carry on specific cultural arts. Sadakazu Gassan took both the 25th Fujiwara Kanefusa and another apprentice to the 1982 Boston Art Museum for an exhibition on the work of Living National Treasures. 

 

He has made many swords that have been dedicated to various temples as well as given to important guests from overseas. Since 2004, he has been expanding his overseas work, introducing Japanese swords in Moscow and Saint Petersburg in Russia. Also in 2004, in Cologne and Munich, he showed off the work behind tempering Japanese swords. This was done at various schools, agencies, and companies.
