Ishiduchi Kanamono Seisakujo

A traditional knife that has been quenched by fires and shaved only on the edge to keep its black face, giving off a beautifully unique appearance.

While not a similar appearance to more finely sharpened knives, this rustic knife contains character, with the process of creating the blade still visible.

This knife is loved by many due to one main reason, when compared to other finely sharpened knives, this knife is said not to rust and is much more durable.

This professional knife has been used from time immemorial as the knife of fishermen, taking it on their trips on the seas, to cut fish from the sea without problem, and more importantly without breaking or rusting.

Japan is both surrounded by a sea, as well as having an inland sea that separates three of Japan’s main islands, Honshu, Shikoku, and Kyushu. The Seto Inland Sea is a calm sea, with little waves, giving birth to a thriving fishing industry for the ports, and perfect waters for farming and production in the area. It also is a charming area, bringing a vast amount of visitors to Japan before the Coronavirus, due to many of the towns and areas having a rich history and culture.

Imabari City in Ehime Prefecture, is well known for not only it’s amazing quality towels that is produced there, but also its abundance of fisheries, which of course lead to a need for knife makers and so on to help supply these fishermen. With that in mind, with this Black Knife, we have taken our respect for these fishermen, and for the sea that has provided for the area, and tried to design a knife that features the waves that fall upon the islands that surround the sea.

With a highly visible change in shading, which has a beautiful gradation to make an image of a wave, the knife brings to the mind pictures of waves from famous Japanese images.

While these knives are not perfectly sharpened to a extremely fine edge, the time that would be spent doing so is used to create this amazing image on the knife one by one.

 

 

Thanks to the amazing work of the artisan blacksmiths, as well using amazing specialised steel, we have created an easy to use, sharp blade that has a great shape.

【Blade】

・Central Material: Steel (Yasuki Blue Paper Steel No.2 )

・Sides: Soft Iron

The blade is made in a special way, having the special steel being sandwiched in a way, a process called warikomi(割り込み|わりこみ|warikomi) between softer iron.

The benefits of a warikomi blade is that it becomes even more durable as well as keeps its edge for longer. When steel material is used to create a blade, as it is hard, it can be sharpened thinly giving a great edge to the blade, but it is also prone to breaking due to being too hard. Because of this it can be unsafe. By not using stainless steel, we are able to make something that isn’t super hard, which works to our advantage, giving the blade a little bit of flexibility, which in turn helps with durability!

 

Using amazing Blue Paper Steel that is one of the most rust-proof steels available

Blue Paper Steel or Aogami, is a steel that comes from the Yasuki Steel family, that is made to have impurities such as sulphur and phosphorus taken out to the best of the producer's ability.

When compared to say White steel, this Blue Paper Steel has been created using added chrome and tungsten, and specially heat treatment to give this high quality steel extra durability. The Blue Paper Steel is valued a lot more highly, and can be used to create an amazing blade.

This type of steel means that the edge on the blade lasts for a rather long time!

 

The knife cuts smooth like velvet, so you can cut beautifully every time. A blade that has little to no edge on it, when cutting something like raw fish (sashimi), tends to tear at the fish, making the fish smell weird, and makes it smell unappetising. As well as this, with a knife that has a good edge on it means less effort is needed to cut, which in turn means it’s safer than a knife with a poor edge.

Furthermore, thanks to the amazing skill of the bladesmiths that make the knife, they are able to create a double-edged knife, something that can’t be done without skill. This means that the knife can be used by left handed and right handed people alike!

 

The edge stays and the blade doesn’t rust. If you wish to as well, you can sharpen the edge to the sharpness you like!

A point to mention is that if you leave the knife wet for an overly long period or you use any acidic substance on the blade, it will rust, so please wipe the blade in these instances.

A rustic knife for a rustic dinner

The Handle of the knife is made from some amazing quality all natural walnut trees to give it a wonderful calming aesthetic which contrasts with the rustic wild image of the blade.

For this Kickstarter Project we have updated the handle of the blade, changing the shape to an octagonal shape. With these shaped handles, they are easier to grip, and hard to slip when holding the handle, giving the hand a sense of familiarity when you hold it. They are the favoured style of grip for many Japanese chefs, and can be seen in a multitude of high class knives.

The handles are hand fitted to the knives, so we don’t recommend using dishwashers. If you do so, it may dislodge the knife from the handle.

I was born in 1966 here in Ehime Prefecture, and I’m the 4th generation to carry on the Ishiduchi Kanamono Seisakujo legacy. For over 100 years, Ishiduchi has put amazing efforts into and carried on the amazing bladesmithing culture that Japan is well known for.

Established at the foot of the highest mountain in West Japan, the Ishiduchi Mountain, and using the amazing environment that comes from being close to the Setouchi Inland Sea, we look to broadcast to the world, the culture that we have been raised in.

When thinking about what is the most important thing to a person, we think of food, and in order to help create this food, we use a whole variety of blades to cultivate this food, from farmers’ sickles and scythes, to the knives that fishermen use.

With this project we want to bring to the forefront the knives that fishermen would normally use and revive them, mixing this amazing old style design with modernised technology, and send these knives all around the world!
